Deviled eggs aren’t the only quick and easy appetizer.

Appetizers are great way to cater to a variety of tastes when you host a party or barbecue. Summer appetizers should be all about ease of preparation and fresh seasonal flavors; things that you can prepare quickly using the bounty of delicious produce available during the summer.

Tomatoes are a quintessential part of summer. For an easy appetizer, halve grape or cherry tomatoes, skewer them on toothpicks along with cubed bufala mozzarella and basil, and then drizzle the skewers with olive oil or balsamic vinegar.

Finish the skewers with some salt and freshly cracked pepper.

Though bell peppers are available year round, their growing season peaks in summer. This means they’ll be more flavorful and delicious during the summer months.

Take advantage of the season by using bell peppers in an easy appetizer. Dice them, toss them with salt, pepper, and fresh herbs, and then layer them on toasted slices of bread that have been spread with ricotta or goat cheese.

Figs are another summertime treat.

Slice fresh figs in half, wrap them in thin slices of salty prosciutto and skewer them with fresh rosemary for a simple and sophisticated summer appetizer.

Bake thinly sliced salami in the oven until crispy. Serve with bottled ranch dressing for dipping. (The third ingredient is blood pressure medication.)

Blanch spinach, drain, squeeze the water out of it, and chop roughly. Mix with crumbled feta cheese. Cut store-bought puff pastry into squares of about 2 by 2 inches. Place some of the spinach mixture in the center of each. Brush a little water onto the edges of the squares and seal them into turnovers. Bake at 400 degrees until puffed and golden brown.

Caramelized Onion Dip

Recipe courtesy of Michael Schwartz of Michael’s Genuine Food & Drink in Miami. Schwatrz’s ode to Lipton’s famous onion soup dip includes rich, sweet caramelized onions, which add a lovely contrast of flavor to the cream cheese, sour cream and mayonnaise. Serve with thick-cut potato chips, crackers, or crudités or smear on party toasts.

2 tablespoons unsalted butter
2 tablespoons canola oil
5 medium onions, halved, thinly sliced
1 large garlic clove, minced
8 ounces cream cheese, softened
1 cup mayonnaise
1 cup sour cream
Kosher salt and freshly ground pepper
1 teaspoon chopped parsley

1. In a large saucepan, melt butter in the oil. Add onions and cook over high heat, stirring frequently until just softened and beginning to brown, about 10 minutes. Reduce heat to moderate and cook, stirring frequently, until onions are golden and softened, about 20 minutes. Add garlic and cook until fragrant, about 1 minute. Let cool, then coarsely chop the onions.

2. In a standing mixer fitted with the paddle, beat cream cheese at medium speed until smooth. Beat in mayonnaise and sour cream. Fold in onions and season generously with salt and pepper. Scrape into a bowl, cover and refrigerate until chilled. Sprinkle with parsley to serve.
