First we prepare the filling: we put the dates in a bowl and pour hot water over them to hydrate.

When they are swollen, squeeze them well with water and cut them into small pieces with a sharp knife. We crush the bananas with a fork and put a few lemon stalks so that they don't oxidize.

Put the chopped dates over the bananas and mix. Let's put it aside.

Sift the flour and put it in a higher bowl.

Add sour cream, lard, yolks, salt, sugar, cinnamon and knead well (can be put in the robot).

Depending on the quality of the cream you use and the flour, the dough may require more flour.

You need to get a dough that you can roll out.

We start the oven to heat to 180 degrees and we cover the tray with paper.

Spread the dough with the rolling pin, we must spread it well until we have a thickness of about 0.5 cm.

Cut the dough into a round shape and start making the cookies.

Put a teaspoon of the banana and date mixture in the middle of a circle, take another part of the dough and cover the filling. With a fork we press around and place in the tray.

Beat an egg white and grease each piece separately.

Put the tray in the oven and bake for about 20 minutes, brown a little on top and then I'm ready.

Leave to cool and keep in tightly closed tin boxes.

Cake with bananas, dates and rum / no added sugar, no gluten

250g seedless dates (for me this meant 2 packets of dates with seeds, of 200g each: p) I put them in a saucepan with 200ml water and let them boil for 5 minutes.

Then I drained them, put them in the food processor together with 100ml of the liquid in which they boiled and 2 ripe bananas and I mixed them until I got a fine paste.

I mixed in a bowl 100g of walnuts, 400g of raisins, 100g of fine corn, 2 teaspoons of baking powder and 2 teaspoons of mixed spice (This is an English mixture of spices that I bought from other lands. It is an aromatic combination of scrotum, nutmeg, juniper, and sometimes some cloves and ginger. You can use a combination of homemade spices or you can take from here.)

Over the dry mixture above I added dates & banana paste, plus 3 tablespoons of black rum. Courageously, I plunged into the 80-degree bottle of Stroh. I took it from Austria in November, but I saw that it can also be found at The Liquor Store, my booze dealer of choice.

As a last resort, I knocked 2 egg whites until they froze and I mixed them with a spatula in the cake mix. I poured the whole thing into a cake tin lined with baking paper, leveled the surface and sprinkled some banana slices. Then I put the cake in the oven at 180 degrees, where it stayed for about 1 hour.

When it was well browned, as in the picture below, I took it out of the oven, then out of the pan and let it cool on a cake rack (or you can use a normal one, just to show no traces of to the last pork ribs that had arrived there).

The result is a very sweet, very moist cake, which keeps very well for several days in a row.

Mix for a few minutes until you get a creamy and homogeneous composition.

Transfer the banana and avocado cream into cups (150 g / each), decorate with chopped chocolate and let cool for 10-15 minutes. Then it is ready to eat. Good appetite!

Banana and yogurt smoothie

Peel a squash, grate it and put it in the blender.
Add the cheese and shake the container a little, so that the cheese occupies the spaces between the banana pieces.

We also add 3-4 mint leaves, for freshness and pleasant aroma.

Then add yogurt until the container is filled three quarters, then shake it again and put it in the device already connected to the voltage source.

We press the button and in a few seconds breakfast is ready.

And I can't help but praise my Blend Active Pro blender from Breville, which is a great help in my kitchen and with which I prepared this wonderful smoothie recipe with bananas and yogurt.

I adore him!
May it be useful to you!

Banana pancakes

Pancakes are a dessert that is prepared quickly and the fact that they have a variety of fillings makes us want to always try new recipes. Ever since I imported the famous pancakes, I have found that they are as successful as the classic pancakes, maybe they are more loved by children due to the fact that they are much fluffier. My spikes don't make any difference (for now) but I started to love these small and fluffy pancakes more. There are enough recipes so I have to choose from just to have time to prepare them.

I made the version of pancakes with bananas the other day and I plan to repeat it as soon as possible. They are easy to make and the yogurt in the composition gives them a very good taste.

Ingredients (about 9-10 pieces):

  • 2 eggs
  • 2 tablespoons sugar
  • 1 sachet of vanilla sugar
  • 180g yogurt
  • 110g white flour 000
  • 1 teaspoon grated baking powder
  • 1 banana
  • a little bit of oil

1. Beat the eggs a little with the sugar and vanilla sugar. Add the yogurt, then the flour mixed with the baking powder and a pinch of salt. The dough should be slightly thicker than that of regular pancakes.

2. Peel a banana and cut it into thin slices.

3. Put a little oil in a pan, let it heat up and pour the pancake mixture with a polish. Let it sit alone and put the banana slices on top. After it browns a little, turn the pancake on the other side. I recommend making them smaller because they look much better.

They are delicious with a glass of milk!

This recipe can also be made in a version without bananas.
