I really like beans, that's why the first slowcooker dish was a bean stew.
- 500 g beans
- 2 large onions
- 1 piece carrot
- 1 piece of parsnips
- 1 piece parsley
- 1 piece of celery
- 1 capsicum
- 2-3 tablespoons tomato paste
- 1 potato
- salt
- peppercorns
- 50 ml oil
- 1/2 cup water
- 1 bay leaf
- a small branch of dried thyme
Servings: 6
Preparation time: over 120 minutes
RECIPE PREPARATION Crock-Pot slowcooker bean stew:
I put the beans in cold water soaked from evening until morning.
I drained the beans and put a pot of water on the fire, about 2 l and, when the water started to boil, I also put the beans and let them boil for 10 minutes. Then I drained the water and put the beans in the bowl of the slow cooker.
I cut the onion, the roots, the capsicum and put them over the beans.
I added oil and water.
I put the lid on the pot and plugged the Crock-Pot slow cooker into the socket, set it to high and let it boil for 4 hours. I took the lid and added salt, peppercorns, bay leaf and thyme branch, as well as tomato paste. I mixed and put the lid on and let the pot boil for another hour. I got a bean delight.
